I've been all about salads lately. I'm back to a 100% vegan lifestyle and salads are an easy way to incorporate lots of goodies. I've finally realized that the best way to ensure that I eat healthy is to have all of the ingredients prepped and ready to go when hunger strikes. My favorite combo offers my body all the protein, vitamins, and minerals it's craving. The full list of ingredients is here. I rotate between using Newman's Own Lite Raspberry Walnut Vinaigrette and Annie's Lite Goddess Dressing. Either way, this salad is totally scrumptious!
